National Pecan Sandies Day is an American food holiday that is celebrated by cookie lovers each year on June 23rd.

As long as baking is documented, cookie-like wafers have existed.  This is in a large part because they deal with travel very well.  Cookies have changed and evolved over the years with the modern standards of sweetness and the many various varieties.

Pecan sandies are a favorite of many and are typically made with a combination of flour, sugars, butter, pecans and a few additional ingredients.  The texture of these melt-in-your-mouth cookies are similar to shortbread cookies.
